This is a vegan take on the pulled pork sandwich. I promise that you will be surprised at how amazing this sandwich is. Not only is it delicious, but it freezes well, and you can just eat it on its own. Sometimes I put it in a mason jar and bring it to class with me and eat it with a fork. Get ready to be blown away.
4 cans of young/ green jackfruit
2 green onions, chopped
3 tsp minced garlic (approximately 3 cloves)
1 cup of white wine
1/2 bottle of barbecue sauce
crushed red pepper to taste
sea salt and freshly cracked pepper to taste
Sandwich bread or wraps
1. Drain and rinse the jackfruit to remove the brine.
2. Shred the jackfruit. I use my hands, but you can use whatever method you prefer. Be careful not to shred it too much.
3. Put the jackfruit in a crockpot. Add onions, garlic, wine, barbecue sauce, and seasonings.
4. Cook on low for 8 hours (or on high or 4 hours)
5. Serve and enjoy
